Emily's Olive Oil Cake

A favorite for summer birthdays!

INGREDIENTS
1 cup olive oil
3 eggs
1 1/2 cup Dominos golden sugar PLUS 2 Tablespoons for sprinkling on the top before baking 
1/2 teaspoon almond extract
1 1/2 teaspoons good vanilla extract 
1/2 cup freshly squeezed lemon juice 
Zest from 3 lemons
2 cups flour
1 teaspoon salt
1/2 teaspoon baking powder 
1/2 teaspoon baking soda 
1 cup whole milk
Powdered sugar for dusting 
Fresh berries - raspberries, blueberries and/or strawberries 

INSTRUCTIONS
•Preheat oven to 350 degrees 
•Grease a 9” springform pan with olive oil
•Whisk together Olive oil, eggs and sugar
•Add the almond extract, vanilla extract, lemon juice and lemon zest and blend until combined
•In a separate bowl, mix together flour, salt, baking powder and baking soda
•Add the dry ingredients alternating with the milk to the wet ingredients, in a couple of batches 
•Don’t over mix!
•Pour batter into prepared springform pan 
•Sprinkle 2 teaspoons golden sugar on top of batter
•Bake for 50-55 minutes. Test to make sure it is baked through. If top begins to get too brown, cover with foil
•Cool and sprinkle with powdered sugar 
•If desired, sprinkle berries on the top or serve along side of cake

Emily and her husband have lived in BH for the last 25 years, where they raised their four children. Nightly family dinners around the kitchen table hold some of Emily’s favorite memories. She has always loved to cook, inspired by her mother and grandmother, both fabulous cooks, who cooked healthy meals with fresh vegetables from the garden. They tended to stray from traditional dishes and that’s how Emily grew up eating. Though this recipe is not necessarily healthy, it is not your traditional cake recipe made with butter and a lot of sugar, is delicious with fresh berries and is a family favorite, especially for family spring and summer birthdays!
