HSW Pimento Cheese

Creamy, tangy, and gently spiced, this Southern staple is the kind of spread that disappears as
quickly as it’s set on the table. Sharp cheddar and pepper jack melt into silky mayonnaise, while
bright pimentos add sweetness and color. The result? A bold yet comforting classic — perfect
for crackers, crudités, or a thick swipe on warm toast.

Ingredients 
(Yields 16 ounces)
  • 1½ cups shredded cheddar cheese
  • ¾ cup shredded pepper jack cheese
  • 1.5 tsp mayonnaise
  • 2 oz diced pimentos, drained
  • 1 tsp granulated garlic
  • To taste - freshly ground black pepper
  • To taste - kosher salt
Instructions
In a medium mixing bowl, combine the shredded cheddar and pepper jack. Add the mayonnaise
and gently fold until the mixture becomes creamy but still textured.

Stir in the diced pimentos, granulated garlic, salt, and pepper. Mix until evenly incorporated,
taking care not to overwork the cheese.

Cover and refrigerate for at least 30 minutes to allow the flavors to meld and deepen.

Serve chilled or at cool room temperature, generously spread over toasted bread, spooned onto crackers, or tucked into sandwiches.
