Fruity Chicken Salad With Grapes and Pecans

It starts with a rotisserie chicken.  It has been too hot to grill outside, and it is too hot to turn on the oven in the house. It's the time of year when salads are such a good choice. This salad is healthy, light, refreshing, and easy to prepare especially when you start with the rotisserie chicken. At $4.99 for a rotisserie chicken, it is a very inexpensive meal. Chicken is good quality protein and low in fat and cholesterol. For households with two people there is always left over chicken for several meals. The legs and thighs are eaten first at our house. That leaves the chicken breast for other meals. 
 
The Fruity Chunky Chicken Salad with Grapes and Pecans has become one of our favorite chicken salads; although, there are a lot of chicken salad recipes available. I made this salad when we had new neighbors move in three houses down from us. They had just moved in and were sick when we took them the meal.  A few days later, the lady stopped and said, "This is the best chicken salad I have ever eaten!" I told her I would put her comments in for all of you to know how she felt about the Fruity Chicken Salad. Next, we had two young people, 20-year-olds from Argentina, staying with us for 10 days. The FIFA World Cup and watching Messi set records is why they came. They were thrilled with the matches. For one of the meals, I served the Fruity Chicken Salad with Grapes and Pecans. It was another hit. When Tomas went back for seconds, I knew how much he was enjoying it. He wanted to know what all was in it.  We really enjoy this recipe. The only other thing we serve with this meal is crackers from Kellogg's Cracker Collection. Croissants or sour dough bread are also good. Know you will enjoy a delicious cool meal on these hot days.
 
Ingredients for the Salad:
4 cups shredded rotisserie chicken
1 1/4 cups seedless red grapes, halved
1 cup pineapple chunks (fresh or canned, drained)
1/2 cup celery, finely chopped
1/2 cup chopped pecans or slivered almonds
1/4 cup dried cranberries or dried cherries
1/4 cup chopped sweet onion, optional (I use the onion.)
Lettuce leaves   
 
Ingredients for the Dressing:
1/4 cup mayonnaise (Dukes)
1/2 cup Greek yogurt
1 tablespoon honey
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1/8 teaspoon salt
1/8 teaspoon pepper
 
Preparation:
1.  Prepare the salad:  In a large mixing bowl, combine the chicken, grapes, pineapple, celery, pecans, dried cranberries (or cherries), and sweet onion.
2.  Make the Dressing:  In a small bowl, whisk together Greek yogurt, mayonnaise, honey, Dijon mustard, lemon juice, salt, and pepper until smooth.
3.  Combine the Mix:  Pour the dressing over the salad ingredients and toss gently to coat everything evenly.
4.  Chill and Serve:  Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld. (I found making it the day before and serving the next day was excellent and helpful on a busy day.)
Serve on a bed of greens.
