A Cozy Collaboration: Archway & Chef Steph
As the leaves started to turn this year, we teamed up with Chef Steph, a talented local chef known for her down-to-earth approach to delicious food, to create recipes that pair perfectly with Archway wines. Together, we wanted to capture that cozy, slow-down-and-savor feeling that winter brings — the kind that fills your home with the aroma of something wonderful simmering away.
One of our favorite creations from that partnership is Chef Steph’s Archway Pinot Noir Pot Roast. It’s a dish made for chilly evenings, family dinners, and of course, a glass (or two) of Pinot Noir.
Archway Pinot Noir Pot Roast
Ingredients:
2–3 lb chuck roast
Salt and pepper
1 head garlic, smashed
1 large onion, large dice
2 carrots, large cuts
2 parsnips, large cuts
3 celery stalks, large cuts
2 yams or sweet potatoes, large cuts
2 Tbsp Dijon mustard
¼ cup Worcestershire sauce
1 cup Archway Pinot Noir
1 qt. beef broth or stock
2 Tbsp garlic powder
2 Tbsp dehydrated onion
1 Tbsp dried oregano
A few large pinches salt
Plenty of cracked black pepper
Fresh herbs, your choice

2 Tbsp dehydrated onion
1 Tbsp dried oregano

Directions:
- Heat a heavy-bottomed skillet (cast iron works great) on high with a little butter or oil. Season the roast generously with salt and pepper. Sear each side until a deep, golden crust forms — don’t skip this step, it’s worth it! Set the roast aside.
- In a slow cooker, layer half of your garlic, onions, carrots, parsnips, and celery. Make a little well and nestle the roast in the center. Add the remaining veggies on top, along with fresh herbs and bay leaves.
- In a separate bowl, whisk together Dijon, Worcestershire, Archway Pinot Noir, broth, garlic powder, dehydrated onion, oregano, and seasonings. Pour over the roast and veggies. Add a splash more Pinot if the herbs aren’t fully submerged.
- Cook on low for 10–12 hours (or high for 6–7) until tender.
- Pour yourself a glass of Archway Pinot Noir, grab a plate, and enjoy — you’ve earned it.
