Connie's Old-Fashioned Tomato Soup

Connie is one of our chefs at the Dorset Union Store and this recipe harkens back
generations in her family. Originally created by her grandmother, Connie has made it
unique by adding some non-traditional ingredients. It’s a hallmark recipe on how to
present a soup as both rustic and elegant.

For a lightly smoked version, try fire-roasted tomatoes and smoked maple syrup. For a
little heat, add a pinch of crushed red chili flakes with the onions. Garnish with more
ground black pepper and a little swirl of olive oil. It almost goes without saying, this
soup is best paired with your favorite grilled cheese sandwich!!

Ingredients:

For the Soup:
3 Tbsp extra virgin olive oil
1/2 ea Spanish Onion, small dice
3 ea celery ribs, large dice
2 Tbsp Basil pesto (nut free)
1 cup vegetable stock
2 Tbsp Maple syrup
2 ea canned crushed tomatoes, 28 oz
1 cup heavy cream, 40%
1 tsp Kosher salt
1 tsp black pepper, ground

Procedure:

For the Soup:
1. Heat a non-reactive pot on medium-high heat.
2. Add olive oil and onions, cook & stir until they become translucent.
3. In a food processor, pulse the celery until resembling a small dice; err on the small side.
4. Add the celery to the onions and continue to cook & stir; 2-3 min.
5. Add the pesto, stock and maple syrup; cook on medium heat for 15 min.
6. Add tomatoes, cream, salt and pepper.
7. Heat to desired temperature & serve.
