Beyond Burgers: Unexpected Foods You Should Be Grilling
Summer grilling season is officially here, and while burgers and hot dogs will always have their place at the barbecue, I’m here to encourage you to think a little bigger this year. Some of the best foods to throw on the grill are the ones people least expect.
As a chef, I love grilling because fire transforms ingredients in a way no kitchen appliance can. The heat caramelizes natural sugars, adds smoky depth, and creates those irresistible charred edges that make food taste like summer. And the best part? You don’t need expensive equipment or complicated recipes to make something memorable.
One of my favorite unexpected ingredients to grill is romaine lettuce. Yes, lettuce! Slice a head of romaine in half, drizzle it lightly with olive oil, and place it cut-side down on a hot grill for just a minute or two. The outside gets lightly charred while the center stays crisp and fresh. Finish it with lemon, parmesan, cracked pepper, and a creamy dressing for a smoky twist on a Caesar
salad.
Fruit is another game changer on the grill. Peaches, pineapple, watermelon, and even strawberries become sweeter and more flavorful once caramelized over an open flame. Grilled peaches are one of my summer favorites. I love serving them with whipped mascarpone, honey, and toasted pistachios for an easy dessert that feels elegant without much effort. Grilled pineapple also pairs beautifully with chicken, pork, or tacos.
If you’ve never grilled avocados before, this is your sign to try. Halve them, remove the pit, brush lightly with oil, and grill them face down for a few minutes. The grill adds a subtle smokiness while keeping the avocado creamy inside. They’re perfect filled with shrimp salad, pico de gallo, or even just a squeeze of lime and sea salt.
Bread is another underrated grilling ingredient. Toss thick slices of sourdough, naan, or flatbread directly onto the grill for a few minutes until lightly charred. Grilled bread instantly elevates summer meals and works beautifully alongside salads, dips, and grilled vegetables. At home, I’ll often grill bread and rub it with fresh garlic while it’s still warm for a simple side that everyone gravitates toward.
Cheese might surprise people most of all. Halloumi, a firm Mediterranean cheese, is perfect for grilling because it holds its shape over high heat. It develops a golden crust on the outside while staying soft inside. Serve it with herbs, tomatoes, and olive oil, and you have an easy summer appetizer that feels restaurant-worthy.
A few quick grilling tips can make all the difference. First, always preheat your grill properly. A hot grill helps prevent sticking and creates better char marks. Second, lightly oil your ingredients instead of pouring oil directly onto the grill grates. And finally, don’t overcomplicate seasoning. Salt, pepper, citrus, fresh herbs, and good olive oil often go further than heavy marinades.
This summer, keep it simple and have fun with it. Grilling doesn’t have to be complicated to feel special. A few fresh ingredients, a hot grill, and people gathered around the table are usually all you need. Try something new, trust your instincts, and don’t worry if everything isn’t perfect. Sometimes the slightly charred peach or extra crispy piece of bread ends up being everyone’s
favorite part of the meal.
