Linda’s Harvest Loaf

If fall were a loaf, it would be this one — warm pumpkin, cozy spices, and just the right touch of sweetness.

As the leaves turn and the air takes on that crisp October chill, nothing says fall quite like the aroma of pumpkin and spice wafting from the oven. This Harvest Loaf combines all the cozy flavors of the season: pumpkin, cinnamon, nutmeg, and cloves with the sweetness of chocolate chips and the crunch of walnuts. Perfect for sharing with neighbors, enjoying after a day at the pumpkin patch, or savoring with a cup of coffee on a cool morning, it is sure to become a seasonal favorite.

INGREDIENTS: 
1 3/4 c flour
1 t soda 
1 t cinnamon
1/2 t nutmeg
1/4 t ginger
1/4 t ground cloves
1/2 c butter
1 c sugar
2 eggs
3/4 c pumpkin
3/4 c chocolate chips
3/4 c chopped walnuts

Drizzle:
1/2 c powdered sugar
1/8 t nutmeg
1/8 t cinnamon
1-2 T cream

  • Preheat oven 350*
  • Grease a 9x5 loaf pan
  • Mix together the flour, soda, salt and the spices. Cream the butter gradually. Add sugar and cream well, and blend in the eggs and beat well
  • Add in the dry ingredients alternating with the pumpkin. Start and end with dry ingredients. Stir in the chocolate chips and 1/2 c of the  walnuts. Pour into the pan and sprinkle the rest of the walnuts on top. Bake for 65-75 minutes. 
  • Let it cool, drizzle the glaze on top. Let it stand for 6 hours. Serve!
