Kiera's Lucky Treats

Editor's note:  When we heard about Kiera's love of baking, we asked her to share a recipe. When this busy athlete is in a hurry and needs to bring a snack for the team, she likes to whip up these little treats.

Lucky Charms Rice Krispie Treats

If you like marshmallows, these gooey rainbow treats may be your new favorite. The original Rice Krispies Treats were invented in 1939 by Kellogg Company employees Malitta Jensen and Mildred Day in the Kellogg kitchens in Battle Creek, Michigan. You'll find many variations of this popular snack. Some recipes use only Lucky Charms, but Kiera likes the mixture of both. 

Make these with Lucky Charms, and you'll have a new favorite no-bake dessert.

Prep time:  10 minutes. Resting time:  20 minutes. Serves 9.

Ingredients: 
16 oz. marshmallows (any size)
1/2 cup unsalted butter
1/2 teaspoon salt
1 teaspoon vanilla extract
1 cup Rice Krispies
6 cups Lucky Charms 

Instructions
  • Grease a 9" x 9" pan with butter or nonstick cooking spray or line with parchment paper. 
  • Spray a large mixing bowl with cooking spray, add the marshmallows, and microwave in 30-second increments until they're melting and puffy (or use a saucepan).
  • Add the butter and salt to the marshmallows and mix until melted and combined. Tip: grease the spatula!
  • Use a few colorful marshmallows for topping, then add the Lucky Charms and Rice Krispies, one cup at a time, to the melted marshmallows and stir it all together.
  • Pour the cereal mixture into the prepared baking dish and press it into an even layer with a spatula. Tip: Coat your clean hands in cooking spray and press it into the corners.
  • Sprinkle the reserved Lucky Charms marshmallows on top while the treats are still warm. Let them rest in the pan until they come to room temperature. Tip: You can freeze for 20 minutes to set up.
