Grilled Peach and Burrata Salad
Sweet, savory, and full of summer flavor, this Grilled Peach, Crispy Prosciutto, and Burrata Salad makes a beautiful addition to any lunch or dinner table. Caramelized peaches, creamy burrata, peppery greens, and crispy prosciutto come together with a simple honey-balsamic vinaigrette for a dish that feels both elegant and effortless.
Ingredients
For the salad:
- 3 ripe but firm peaches, halved and pitted
- 4 ounces prosciutto
- 8 ounces burrata
- 5 ounces mixed arugula and baby greens
- 1/4 cup toasted pistachios, walnuts, or pecans
- 2 tablespoons torn fresh basil
- Freshly ground black pepper
For the honey-balsamic vinaigrette:
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
- Pinch of kosher salt
- Black pepper to taste
Instructions
Whisk together the vinaigrette ingredients and set aside. Grill the peaches over medium-high heat for 2 to 3 minutes per side, then slice into wedges. Grill the prosciutto for 30 to 60 seconds per side until crisp. Arrange the greens on a platter and top with peaches, torn burrata, crispy prosciutto, nuts, and basil. Drizzle with the vinaigrette and finish with freshly cracked black pepper. Optional: Add a drizzle of honey or balsamic glaze before serving.
