Baked Apples with Joanna Katsikas

Joanna’s company, North Star Achievement Center, is dedicated to empowering adults with intellectual and developmental disabilities to live their best, most independent lives as active members of their communities. This recipe is part of her “Look and Cook” collection from an upcoming book she is currently working on to get published.
Nearly all of the recipes are designed for microwave use, prepared as single servings, and thoughtfully created to limit carbohydrates and sugar. This approach is especially important, as many individuals with disabilities manage diabetes or pre-diabetes. Each recipe is intended to be simple, healthy, and accessible, supporting independence in the kitchen while promoting wellness.


Ingredients:
2 apples
2 tbsp brown sugar
1 tsp nutmeg
2 tsp butter
1 tsp cinnamon
optional:
whipped cream
nuts
ice cream

Cooking Instructions:
1. Core the apples. Using an apple corer, or a knife, take the core and the seeds out of the apple.
2. Combine brown sugar, cinnamon, and nutmeg. Mix well. 
3. Fill the apples with the mixture. Put a teaspoon of butter on top of each apple. Cover. 
4. Microwave for 3 1/2 - 4 minutes. 
5. Serve with any (or all) of the options: ice cream, nuts, or whipped cream!
6. BE CAREFUL! Apples will be hot!
