Bruschetta Chicken Pasta

Bruschetta Chicken Pasta is a fresh and flavorful dish featuring tender chicken, juicy cherry tomatoes and basil tossed with pasta. This easy recipe brings the vibrant taste of bruschetta to your table in a hearty, satisfying meal perfect for any occasion.

Ingredients:

2 Boneless, skinless chicken breasts
8oz. Spaghetti or penne pasta
2 cups cherry tomatoes, diced
¼ cup red onion, finely chopped
2 cloves garlic, minced
¼ cup fresh basil, chopped
2 tbsp balsamic vinegar
¼ cup grated Parmesan cheese
2 tbsp olive oil
1 tsp Italian seasoning
½ tsp garlic powder
Salt and pepper to taste

Instructions:

Cook the pasta:  Bring a large pot of salted water to a boil.  Cook the pasta according to package instructions until al dente.  Drain and set aside.

Prepare the chicken:  Season chicken breasts with Italian seasoning, garlic powder, salt and pepper.

Cook the Chicken:  Heat olive oil in a large skillet over medium heat.  Cook the chicken for 5-7 minutes per side until cooked through.  Let rest, then slice.

Make the bruschetta topping:  In a bowl, mix diced tomatoes, red onion, minced garlic, basil, balsamic vinegar, olive oil and salt.  Toss gently to combine.

Combine:  Toss the cooked pasta in the skillet with chicken drippings.  Slice chicken, place on top of pasta and add bruschetta topping.

Serve:  Sprinkle with Parmesan cheese, garnish with basil and drizzle with balsamic glaze if desired.  Enjoy warm!
