Deep Dish Brownies

Chocolate Desserts Are Too Good to Keep Them to Oneself!



This recipe has been a journey of trial and error. Brownies are tricky. You want a good fudgy (NOT cake like) consistency, but not so much so that they have to be eaten with a spoon. With a few little tricks, the right ingredients and correct baking time, these turn out perfectly without fail.

Brownies are a true comfort food. Warm, straight out of the oven, they are a family favorite. My Dad requests a pan of brownies just for himself! Vanilla ice cream or a glass of cold milk are the perfect companions.

Items Needed:
  • 2 Bowls (1 large, 1 medium)
  • 8x8 Glass Baking Dish
  • Parchment Paper–  tear off enough to fit into your baking dish with a bit of overhang. Wad your parchment into a ball under running water. Flatten it out and dry it with a towel. This will allow you to really fit that parchment into your baking dish to lift out the brownies. Plus your parchment won't burn in the oven.
Ingredients:
  • ¾ cup (1½ sticks) UNSALTED butter, melted (salted butter alters the flavor a lot and margarine makes the consistency all wrong.)
  • 1½ cups white granulated sugar
  • 1 tsp vanilla bean paste (preferred because the flavor is stronger than vanilla extract)
  • 3 large eggs 
  • ¾ cup all-purpose flour
  • ½ cup cocoa powder
  • ½ tsp baking powder
  • ½ tsp kosher salt

Directions:

1. Pre-heat your oven to 350° and make sure your oven rack is positioned in the middle.
2. Line the 8x8 glass baking dish with parchment paper. 
3. In a large bowl, stir together melted butter, sugar and vanilla. Add in the eggs and mix well with a spoon. You should not have standing butter nor streaks of eggs if mixed in properly. Set aside. 
4. In a medium bowl, whisk together flour, cocoa, baking powder and salt. Using a sift, so you don't have cocoa lumps, gradually add the dry ingredients into your large bowl with the wet ingredients. Stir with a spoon until just combined. Do NOT overmix! 
5. Spread evenly into prepared baking dish. 
6. Bake 40-50 minutes or JUST until there is no jiggle in the center and the brownies are fully set. 
7. Allow to cool, remove brownies and cut into squares. (Or use a large spoon and scoop the hot brownies into a bowl and top with vanilla ice-cream)
