Peanut Butter Cup Banana Bread

Ingredients
1 cup granulated sugar
2 cups flour, plus 1 tbsp flour
1 tsp baking soda
1tsp baking powder
½ tsp salt
½ cup sour cream
½ cup vegetable oil
1 tsp vanilla extract
2 eggs, beaten
3 large ripe bananas
3 large Reese’s peanut butter cups
1 tbsp mini chocolate chips
 
Directions
1) Preheat oven to 350 degrees. Spray a loaf pan with baking spray.
2) Remove wrappers from peanut butter cups and cut into small pieces. Place two peanut butter cups into a bowl with chocolate chips and coat with 1 tablespoon of flour.
3) In a large bowl mash bananas with a fork and add eggs, vanilla, oil, and sour cream. Stir until completely mixed and set aside.
4) In a large bowl, combine sugar, flour, baking soda, baking powder, and salt. Stir until completely mixed.
5) Add half of the dry ingredient mixture into the banana mixture and fold together with a spatula. Add the rest of the dry mixture and fold together until completely smooth. Do not over mix.
6) Gently fold in peanut butter cups and chocolate chips.
7) Pour batter into loaf pan. Top with remaining peanut butter cup pieces.
8) Bake 65-75 minutes. Loosely cover with foil if browning too much.
9) Check middle of bread with knife or tooth pick, bake longer if needed.
10) When done remove from oven and let pan rest of cooling rack for 10 minutes. Take bread out of pan and let cool completely on rack 1-2 hours.
