Creamy Tuscan Chicken (Perfect for a Cozy February Night)

This comforting dish is rich, flavorful, and elegant enough for a Valentine’s dinner, yet easy enough for a weeknight.

Ingredients
  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 cup fresh spinach
  • Optional: red pepper flakes for a little heat
Instructions
  1. Season chicken with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium heat. Sear chicken 4–5 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, add garlic and sauté for 30 seconds until fragrant.
  4. Add cherry tomatoes and cook until softened.
  5. Stir in chicken broth, cream, and Parmesan. Simmer 3–4 minutes until slightly thickened.
  6. Add spinach and stir until wilted.
  7. Return chicken to the pan and spoon sauce over the top. Simmer 2–3 minutes.
  8. Finish with red pepper flakes if desired and serve warm.
