Creamy Tuscan Chicken (Perfect for a Cozy February Night)

Ingredients
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tsp Italian seasoning
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- 1 cup fresh spinach
- Optional: red pepper flakes for a little heat
Instructions
- Season chicken with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium heat. Sear chicken 4–5 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, add garlic and sauté for 30 seconds until fragrant.
- Add cherry tomatoes and cook until softened.
- Stir in chicken broth, cream, and Parmesan. Simmer 3–4 minutes until slightly thickened.
- Add spinach and stir until wilted.
- Return chicken to the pan and spoon sauce over the top. Simmer 2–3 minutes.
- Finish with red pepper flakes if desired and serve warm.
