April Showers Lemon Berry Trifle
Light, colorful, and full of fresh spring flavor, this easy no-bake dessert is as pretty as it is delicious. Layers of lemon, berries, and fluffy cream make it perfect for April celebrations, brunches, or neighborhood gatherings.
Ingredients
- 1 prepared pound cake (store-bought or homemade), cut into cubes
- 1 box (3.4 oz) instant lemon pudding mix
- 2 cups cold milk
- 1 container (8 oz) whipped topping, thawed
- 1 cup fresh strawberries, sliced
- 1 cup fresh blueberries
- 1 cup fresh raspberries
- Zest of 1 lemon (optional)
- Fresh mint for garnish (optional)
Instructions
- In a medium bowl, whisk together the lemon pudding mix and cold milk for about 2 minutes, until thick.
- Fold half of the whipped topping into the pudding to create a light lemon cream.
- In a clear trifle dish or large glass bowl, start layering:
- Pound cake cubes
- Lemon cream
- Mixed berries
- Repeat the layers until the dish is full, finishing with a layer of whipped topping.
- Garnish with remaining berries, lemon zest, and a few mint leaves for a fresh spring look.
- Chill for at least 1–2 hours before serving.
Make it festive
- Serve in individual mason jars for a picnic or neighborhood event
- Add pastel sprinkles or edible flowers for an Easter touch
- Swap in angel food cake for an even lighter version
