April Showers Lemon Berry Trifle

Light, colorful, and full of fresh spring flavor, this easy no-bake dessert is as pretty as it is delicious. Layers of lemon, berries, and fluffy cream make it perfect for April celebrations, brunches, or neighborhood gatherings.

Ingredients
  • 1 prepared pound cake (store-bought or homemade), cut into cubes
  • 1 box (3.4 oz) instant lemon pudding mix
  • 2 cups cold milk
  • 1 container (8 oz) whipped topping, thawed
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • Zest of 1 lemon (optional)
  • Fresh mint for garnish (optional)
Instructions
  1. In a medium bowl, whisk together the lemon pudding mix and cold milk for about 2 minutes, until thick.
  2. Fold half of the whipped topping into the pudding to create a light lemon cream.
  3. In a clear trifle dish or large glass bowl, start layering:
    • Pound cake cubes
    • Lemon cream
    • Mixed berries
  4. Repeat the layers until the dish is full, finishing with a layer of whipped topping.
  5. Garnish with remaining berries, lemon zest, and a few mint leaves for a fresh spring look.
  6. Chill for at least 1–2 hours before serving.
Make it festive
  • Serve in individual mason jars for a picnic or neighborhood event
  • Add pastel sprinkles or edible flowers for an Easter touch
  • Swap in angel food cake for an even lighter version
