New "SWAMP Salsa" Recipe
Ever wanted to make a batch of fresh salsa for a family gathering or picnic? This simple and easy recipe will make you the hit of the party and makes roughly 24 ounces, which is enough to fill a large wide mouth mason jar.
INGREDIENTS:
- 2 cans stewed tomatoes
SWAMP tonic to taste - 1 bunch of scallions
- ¼ large white onion
- 1 bushel of cilantro
- 1 green jalapeño
- 6 cloves of garlic
- 2 tbsp lime juice
- 1 tbsp pepper
- 1 tbsp honey
- 1 tbsp salt
DIRECTIONS:
- Load blender or food processor with cilantro and chopped onions first (stems are optional) and blend thoroughly
- Add whole peeled garlic, jalapeño (no seeds), and stewed tomatoes, then gently pulse for desired chunkiness
- Add salt, pepper, honey and lime juice and then mix on medium speed for 15-20 seconds
- Add 4-8 drizzles of SWAMP tonic for a little zing & blend for another 15 seconds
TIP: Refrigerate 24 hours before serving and freshness lasts for ~2 weeks.
