New "SWAMP Salsa" Recipe

Ever wanted to make a batch of fresh salsa for a family gathering or picnic?  This simple and easy recipe will make you the hit of the party and makes roughly 24 ounces, which is enough to fill a large wide mouth mason jar.

INGREDIENTS:
  • 2 cans stewed tomatoes
    SWAMP tonic to taste
  • 1 bunch of scallions
  • ¼ large white onion
  • 1 bushel of cilantro
  • 1 green jalapeño
  • 6 cloves of garlic
  • 2 tbsp lime juice
  • 1 tbsp pepper
  • 1 tbsp honey
  • 1 tbsp salt

DIRECTIONS:

  1. Load blender or food processor with cilantro and chopped onions first (stems are optional) and blend thoroughly
  2. Add whole peeled garlic, jalapeño (no seeds), and stewed tomatoes, then gently pulse for desired chunkiness
  3. Add salt, pepper, honey and lime juice and then mix on medium speed for 15-20 seconds
  4. Add 4-8 drizzles of SWAMP tonic for a little zing & blend for another 15 seconds



TIP: Refrigerate 24 hours before serving and freshness lasts for ~2 weeks.
