1. Resident Recipe
Cinco de Mayo always gives me a reason to look for a Mexican dish to share. I had a group of 13 ladies coming for lunch and they had let me know some time back that they love Mexican food. Spicy food is a bit of a problem for me. But I decided to see what I could find on the internet. There were lots of options but after reading a large number of recipes I decided to try one of the recipes that looked like an interesting meal. When I asked what these ladies might like as vegetable one said, "Mexican Street Corn". I didn't want to serve roasting ears at a luncheon as that is hard for many people to eat. But when I found Skillet Mexican Street Corn I decided to try that. Today was the day for the luncheon and I was worried that the Taco Casserole might be too spicy. I was wrong. All 13 said they loved both of these dishes and they said pass the recipes on to our readers. Hope you enjoy these recipes as much as the ladies enjoyed the meal today. I thank Taste of Home for the recipe.
