This delightful Spring Greens & Citrus Salad brings together the season’s best ingredients for a dish that’s as colorful as it is nutritious. Whether you're hosting a garden gathering or simply craving a crisp, refreshing meal, this salad is sure to satisfy.
Ingredients:
- 4 cups mixed spring greens (baby spinach, arugula, or your favorite greens)
- 1 avocado, diced or 1 cup beets
- 1 cup fresh strawberries, sliced
- 1/2 cup fresh orange or mandarin slices
- 1/4 cup crumbled feta cheese
- 1/4 cup sliced almonds, toasted
- 1/4 cup red onion, thinly sliced
Dressing:
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
