How Eddelbuttel Nutrition Inspires Healing, Health, and a Fresh Start for the New Year

When the calendar turns to January, many of us begin searching for fresh starts - ways to feel better, eat better, live better. But for Brittany Eddelbuttel, the heart behind Eddelbuttel Nutrition, the journey toward nourishment began long before resolutions were made. It began with life, loss, love, and a calling to help others rediscover what it truly means to feel whole.

An Australian native who has called Northwest Arkansas home for the last 20 years, Brittany brings a story rich in resilience, heart, and purpose. Her grandmother, Sonja Grimes, was the Benton County Queen of 1954, showing her family’s deep local roots, but Brittany’s own legacy in NWA is being written today through food, community, and connection.

From Australia to Arkansas: A Path Filled With Purpose

After completing her AAS at Northwest Arkansas Community College, Brittany took time off to raise her daughter, Sonja, now 11. That season of life sparked a deeper calling -  to return to school and pursue a degree in Nutrition and Dietetics at the University of Arkansas. She went on to complete her dietetic internship, become a Registered Dietitian Nutritionist (RDN), and later earn her Master of Science in Human Nutrition from The University of Alabama.

But the true turning point came in early 2025, when Brittany experienced unimaginable loss: her fiancé, Zachary, passed away suddenly from a heart attack at just 33 years old.
The grief reshaped everything - including her mission.

“Losing him reminded me how precious life is and how deeply the way we nourish ourselves affects our physical and emotional wellbeing,” she says. “His passing became the heartbeat behind my mission: nourishing families to make healthy choices and live long, happy lives.”
What began as a way to earn a little extra income to help fund their wedding has grown into a purpose-driven business committed to helping families heal, thrive, and reconnect through food.

Where Chef Meets Dietitian: Food With Heart, Science, and Soul

Eddelbuttel Nutrition brings together the best of both worlds -  the skill of a chef and the expertise of a dietitian. Brittany blends culinary creativity with evidence-based nutrition therapy, offering:

  • Catering, classes, and community workshops

  • Nutrition therapy and habits coaching

  • The Nourished Reset: a 16-week whole-self wellness program

Every meal and service is personalized to the client, honoring allergies, preferences, cultural traditions, and family routines. But beyond the plate, Brittany’s work focuses on rebuilding relationships with food - mentally, emotionally, and physically.

“I believe food shapes so much more than our bodies,” she says. “It influences our energy, our emotions, and the way we show up in the world.”

Investing in Community, One Table at a Time

Eddelbuttel Nutrition is deeply woven into Northwest Arkansas’ growing culinary landscape. Brittany teaches at Brightwater: A Center for the Study of Food, mentoring upcoming chefs and inspiring future leaders in the local food scene. She also partners with Honeycomb Kitchen Shop to teach public cooking classes that help families become more confident and connected in the kitchen.

One of her most cherished community offerings is The Gathering Table, a monthly dinner series that creates a safe, welcoming space for conversation, connection, and shared experience. Guests leave nourished not just physically and also emotionally.

“Every class, every meal, every gathering is an opportunity to pour love back into the community,” Brittany says.

A New Year Grounded in Healing and Intention

After navigating loss and rebuilding her business with clarity and courage, Brittany has emerged with a renewed vision. She’s expanding The Gathering Table dinners, growing her Nourished Reset program nationally, and continuing to offer deeply personalized chef and nutrition services to NWA families.

Her philosophy for 2025 (and for anyone seeking a healthier year) is simple:
“Eat nutritious food. Don’t skip meals. Listen to your body. And love yourself through it all.”

Through evidence-based nutrition and chef-inspired guidance, clients learn sustainable habits, gain clarity around food, and build the confidence needed to nourish themselves well. Emotional support and compassion are woven throughout, creating a safe space for clients to feel seen and supported. The Nourished Table can be added for in-home, chef-prepared meals that align with their goals and can support the entire family.

The Nourished Reset — 16 Weeks

A deeper, more immersive transformation for clients ready to make lasting, lifestyle-level change. The Reset blends nutrition, lifestyle strategy, emotional support, and identity work to help clients fully realign their habits, routines, and relationship with food. With expanded time and deeper coaching, clients experience a full reset of body, mind, and daily rhythms. The Nourished Table is available as a premium add-on for those wanting personalized chef-prepared meals for themselves or their families.

The Nourished Table — Weekly Chef Services

A premium weekly chef experience delivering fresh, beautifully prepared meals tailored to each client’s nutritional needs. Meals are prepared in the client’s home, fully customized for individuals or families, portioned for the week, and finished with complete kitchen clean-up. This service can stand alone or elevate both Foundation and Reset for clients wanting done-for-you nourishment.

The Gathering Table — Monthly Dinner Series

A chef-curated communal dining experience centered on nourishment, storytelling, and authentic connection. Guests are invited to show up exactly as they are — through anxieties, hardships, joys, and everything in between — and be fully seen. Each dinner features a seasonal menu, meaningful conversation, and a warm environment designed to bring people together through food and shared humanity.

Beef Shish Kabobs with Lemon Rice Pilaf and Tzatziki

Shish Kabobs
Serving Size: 6-8  kabobs
Ingredients:
1 lb beef tenderloin or top sirloin
6-8  wooden skewers, soaked in water for 1 hour
1 red onion
1 red bell pepper

Marinade:
1 tsp garlic powder
½ tsp paprika
⅛ tsp ground nutmeg
⅛ tsp ground green cardamom
Pinch allspice
S&P TT
1 lemon, juiced
⅓ cup EVOO
⅓ cup dry red wine
 
Instructions:
Cut meat into 1 inch cubes and marinate for at least 30 minutes (preferably 2-4 hours or overnight)

Soak skewers in water for 30 minutes- 1 hour
Cut onion and bell pepper in 1 inch pieces
Thread meat and vegetables onto skewers and grill until medium-rare, 8-10 minutes
 
Greek Lemon Rice Pilaf
Serves: about 6
Ingredients:
2 cups long grain white rice
EVOO
1 medium yellow onion, chopped
2 garlic cloves
½ cup orzo pasta
2 lemons, juice of plus zest of 1 lemon
2 cups chicken stock
Salt
1 large handful chopped fresh parsley
1 tbsp fresh dill
 
Instructions:
Wash rice well and soak for 15 minutes in cold water; drain well

Heat 3 Tbsp EVOO in a large sauce pan with a lid until oil is shimmering but not smoking. Add onions and cook for 3-4 minutes until translucent. Add garlic and orzo pasta until orzo gains some color then stir in rice. Toss to coat.
Once rice smells nutty, add lemon juice and chicken stock. Bring liquid to a boil then turn the heat to low. Cover and cook for 20 minutes, then turn the heat off without lifting the lid.
When ready to serve, uncover and stir in parsley, dill and lemon zest. Enjoy!
 
Tzatziki
Serves: about 6
Ingredients:
½ cup finely grated cucumber
1 cup whole milk Greek yogurt
1 Tbsp fresh lemon juice
½ Tbsp EVOO
1 garlic clove
¼ tsp salt
1 Tbsp fresh dill
1 Tbsp fresh mint
 
Instructions:
Place the grated cucumber in cheesecloth and gently squeeze out the excess water
In a medium bowl, combine the cucumber, yogurt, lemon juice, olive oil, garlic, salt, dill and milt. Chill until ready to use
