Chocolate Chip Cottage Cheese Muffins

These chocolate chip muffins are a delicious, protein-boosted twist on the classic favorite. Made with cottage cheese, they’re soft, moist, and subtly tangy, while offering extra protein to keep you fuller longer.

Ingredients:
 
  • 1 cup cottage cheese, drained
  • 1¼ cups rolled oats
  • 2 eggs
  • 3 TBSP maple syrup
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • pinch nutmeg
  • 1/4 tsp salt
  • 1/3 cup sugar-free chocolate chips
Directions: 
 
  1. Preheat oven to 350℉. Grease a 12-slot muffin tray with butter or spray (you can also use liners).
  2. Add the cottage cheese, oats, eggs, syrup, baking powder, vanilla, cinnamon, nutmeg, and salt to your blender and pulse until mostly smooth (stir with a spoon if needed).
  3. Drop in the chips and stir with a spoon. 
  4. Transfer your batter evenly to the muffin tray, equally filling 9 slots of the tray. Top with more chocolate chips. 
  5. Bake for about 20-22 minutes or until golden brown and a toothpick comes out clean. Allow to set in the pan for 5 minutes and then transfer to a wire rack to cool for 15 minutes.
  6. Store in the fridge and reheat them if desired– they will reheat like you just baked them fresh!
