Healthy Start Protein Waffles

These healthy, protein-packed waffles are the perfect way to start your day! With a deliciously light texture and a boost of protein, they offer a satisfying and nutritious breakfast that will keep you fueled for hours. Whether you're looking for a post-workout treat or a wholesome morning meal, these waffles hit the spot!

Ingredients
1/2 cup almond flour
2 cups (1 lb. container) low-fat cottage cheese
1/4 cup ground flaxseed
1/4 cup unflavored zero-carb protein powder
1 tablespoon baking powder
1 large egg
1/4 cup liquid egg whites
1 teaspoon ground cinnamon
1/8 teaspoon fine sea salt
Nonstick cooking spray
2 tablespoons powdered sugar
Blueberries
 
Directions
Add the oats to a high-speed blender or food processor and pulse until ground to a flour. Add all of the remaining ingredients, except for the powdered sugar. Blend, scraping down the sides as needed, until a batter forms.

In a heated waffle maker coated with nonstick cooking spray, cook the batter until the waffles are golden brown. Serve warm, dusted with powdered sugar.
The waffles can be stored in a sealed container in the refrigerator for up to 3 days, or frozen for up to 1 month.
 
While the texture is best reheated in a low oven or toaster oven, you can also microwave waffles in short intervals for 30 seconds to 2 minutes.
Top with Blueberries.
