Not Date Night Pasta

Mary Young shares one of her favorite recipes, a classic Italian comfort food, also called “Poor Man’s Food."

INGREDIENTS:
  • 2 large scrubbed Yukon Gold potatoes
  • 12 oz. of spaghetti
  • Olive oil to sauté chopped garlic in a small saucepan
  • 1 c. extra-virgin olive oil
  • 12 garlic cloves, peeled and coarsely chopped
  • 1 dried red pepper or red pepper flakes to taste (optional)
  • Garlic salt to taste
  • 1/4 tsp. Of freshly ground pepper
  • 1/4 c. of chopped parsley

DIRECTIONS:
  1. Bake potatoes until tender for easy slicing.
  2. Cook spaghetti until tender in salted boiling water.
  3. Thinly slice unpeeled potatoes.
  4. In a small saucepan, add olive oil and sauté chopped garlic over medium heat until garlic is golden brown (about 10-15 minutes) and set aside when done, monitoring that the garlic does not begin to burn.
  5. Add 1 c. of olive oil to a large saucepan and heat until hot.
  6. Add potatoes and pepper to the hot oil and cook until potatoes are cooked crisp.
  7. Lower the heat of the large saucepan, add sautéed garlic, and stir and mix well.
  8. Start by adding about half of the spaghetti, adding more spaghetti as needed, mix well, and divide into four bowls. Pour any leftover oil on top. Sprinkle garlic salt, pepper, and parley.
