Creamy Tuscan Chicken

This creamy Tuscan chicken brings big flavor with simple ingredients, making it a go-to cozy comfort recipe.

Ingredients
  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 tsp. salt
  • ½ tsp. black pepper
  • 1 tsp. Italian seasoning
  • 2 tbsp. olive oil
  • 3 cloves garlic, minced
  • 1 c. heavy cream
  • ½ c. chicken broth
  • ½ c. grated Parmesan cheese
  • ½ c. sun-dried tomatoes, drained and chopped
  • 1½ c. fresh baby spinach
  • ½ tsp. red pepper flakes (optional)
  • Fresh basil or parsley, for garnish

Instructions
  1. Season the Chicken
    Pat the chicken dry and season both sides with salt, pepper, and Italian seasoning.
  2. Sear
    Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear for 4 to 5 minutes per side, until golden and cooked through. Remove from the skillet and set aside.
  3. Build the Sauce
    In the same skillet, reduce heat to medium. Add garlic and cook for about 30 seconds, just until fragrant. Stir in the chicken broth, scraping up any browned bits from the bottom of the pan.
  4. Make it Creamy
    Add the heavy cream and Parmesan cheese, stirring until smooth. Let the sauce simmer for 3 to 4 minutes, until slightly thickened.
  5. Add the Tuscan Touch
    Stir in the sun-dried tomatoes, spinach, and red pepper flakes (if using). Cook until the spinach wilts.
  6. Bring It Together
    Return the chicken to the skillet and spoon the sauce over the top. Simmer for another 3 to 5 minutes to warm everything through and deepen the flavors.
  7. Serve
    Garnish with fresh basil or parsley and serve warm.
