Raj’s Cilantro & Mint Chutney
Bright, fresh, and full of flavor, this cilantro and mint chutney adds a vibrant kick to almost any dish. With a hint of heat from Serrano pepper and a smooth richness from cashews, it’s the perfect balance of creamy and refreshing.
Ingredients
- 1 bunch cilantro, washed and chopped (leaves and stems)
- 1 sprig fresh mint leaves (stems removed)
- 1 Serrano green chili pepper
- ⅓ cup cashews
- 1 tablespoon olive oil
- 3 tablespoons water
- 1 ice cube
- Lime juice, to taste
- Salt, to taste
Instructions
- Prepare Ingredients
Wash and roughly chop the cilantro. Remove mint leaves from stems. - Blend
Blend all ingredients in a blender or food processor until you reach your desired consistency. - Serve & Store
Use as a dipping sauce or spread. Refrigerate after use.
