A Sauce Worth the Simmer

Easy enough for a busy weeknight and satisfying enough to feel like a special meal, it has become a household staple that the whole family looks forward to. What makes it a little unique is the addition of ground deer meat alongside ground beef, a nod to the South Louisiana tradition of hunting that brings a depth of flavor and a personal touch to an otherwise classic sauce. Serve it over pasta, layer it into lasagna, or spoon it over toasted French bread with a generous sprinkle of Parmesan. However it lands on the table, it’s the kind of meal that brings everyone together.
INGREDIENTS
- 1/2 lb ground beef
- 1/2 lb ground deer meat
- 1 medium onion, diced
- 1 (15 oz) can tomato sauce
- 1 (6 oz) can tomato paste
- 1 cup beef stock (or 1 cup water)
- 1–2 tsp. garlic powder (or 2–3 cloves fresh garlic, minced)
- 1–2 tbsp. Italian seasoning
- 2–4 tbsp. sugar (adjust to taste)
INSTRUCTIONS
- In a large pot or skillet, brown the ground beef, ground deer meat, and diced onion over medium heat until the meat is fully cooked and the onions are softened.
- Drain any excess grease if needed.
- Stir in the tomato sauce and tomato paste.
- Add the beef stock (or water) and mix until well combined.
- Season with garlic, Italian seasoning, and sugar.
- Bring the sauce to a gentle simmer.
- Reduce heat to low and let simmer for 20–30 minutes, stirring occasionally. Add a little more stock or water if the sauce becomes too thick.
- Taste and adjust seasoning or sugar as desired.
SERVING SUGGESTIONS
Serve over your favorite pasta, use in lasagna, or spoon over toasted French bread with Parmesan cheese.
