Taco Soup
This hearty one-pot soup combines seasoned beef, beans, corn, and tomatoes for a satisfying meal that requires very little preparation.

INGREDIENTS
- 1 pound ground beef or ground turkey
- 1 large onion, chopped
- 1 packet taco seasoning
- 1 packet ranch dressing seasoning mix
- 1 can pinto beans, undrained
- 1 can whole-kernel corn, undrained
- 1 can Rotel
- 2 cans diced tomatoes, undrained
- 1 can black beans, undrained
- 1 can kidney beans, undrained
- 1 can water
DIRECTIONS
- Add the ground beef or turkey and chopped onion to a large pot. Cook over medium heat until the meat is browned and the onion is tender. Drain any excess grease.
- Stir in the taco seasoning and ranch dressing seasoning mix.
- Add the pinto beans, corn, Rotel, diced tomatoes, black beans, kidney beans, and water. Stir to combine.
- Bring the soup to a gentle simmer. Reduce the heat and simmer for 1 hour, stirring occasionally.
- Serve topped with shredded cheese, diced jalapeno, and sour cream.
