Balsamic Chicken Caprese = Pesto "Coodles"
Beat the Heat : A Fresh and Flavorful No-Oven Meal
My family always loves anything with basil! I love it because its only 7 ingredients and I can skip the hot oven and its done in 20 minutes! I was inspired to create this by what is currently seasonally available and the Florida heat making it too hot for the oven!
Ingredients:
- Chicken Breasts (1 per person...butterfly if thick)
- Balsamic Vinaigrette (I love Kens Light Balsamic!)
- Fresh tomatoes, sliced
- Fresh basil, julienned
- Sliced cheese (mozzarella, provolone or muenster), 1 slice per person
- Cucumbers, spiralized. (sub: refrigerated spiralized zucchini noodles)
- Pesto (pre-made or make your own.. I like the refrigerated type)
Putting it Together:
1. Marinate the chicken breasts in Balsamic Vinaigrette in a large Ziplock bag for a few hours.
2. Salt and pepper the chicken then Air fry at 350 for 18-20 minutes.
3. Top each chicken breast with sliced tomatoes, basil and one cheese slice. Air fry for an additional 1 minute.
4. In bowl, mix pesto with spiralized cucumber or zucchini. Add salt/pepper as needed. Serve on the side.
