Harvest Sweet Potato Mash with Maple-Cinnamon Greek Yogurt Swirl
Ingredients
- 3 large sweet potatoes, peeled and cubed
- 2 Tbsp olive oil
- ½ tsp sea salt
- ½ tsp cinnamon
- ½ cup plain Greek yogurt
- 1 Tbsp pure maple syrup
- Pinch of nutmeg
Directions
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- Toss sweet potatoes with olive oil, salt, and cinnamon. Roast 25–30 minutes, until tender.
- Mash roasted potatoes in a bowl until smooth.
- In a small dish, stir Greek yogurt with maple syrup and nutmeg.
- Swirl the yogurt mixture into the sweet potatoes just before serving for a creamy, slightly sweet finish.
