Harvest Sweet Potato Mash with Maple-Cinnamon Greek Yogurt Swirl

Ingredients

  • 3 large sweet potatoes, peeled and cubed
  • 2 Tbsp olive oil
  • ½ tsp sea salt
  • ½ tsp cinnamon
  • ½ cup plain Greek yogurt
  • 1 Tbsp pure maple syrup
  • Pinch of nutmeg
Directions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. Toss sweet potatoes with olive oil, salt, and cinnamon. Roast 25–30 minutes, until tender.
  3. Mash roasted potatoes in a bowl until smooth.
  4. In a small dish, stir Greek yogurt with maple syrup and nutmeg.
  5. Swirl the yogurt mixture into the sweet potatoes just before serving for a creamy, slightly sweet finish.
