Argentinian Chicken & Vegetable Soup
 
PRIZED QUALITIES OF THIS DISH: 
This fresh meal-in-one is a hearty stunning soup with succulent chunks of meat and vegetables.
 
INGREDIENTS:
  • 1 whole chicken, cut into pieces or 3-4 pounds of bone-in chicken thighs/ legs
  • Salt and black pepper to taste
  • 2 bay leaves
  • 6-8 cups water (or vegetable/chicken stock) 
  • 2 large carrots, sliced
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 sweet potatoes or yams, peeled and cubed
  • 1 butternut squash, peeled and cubed
  • 1 red onion, chopped
  • 2 celery stalks, chopped
  • 1 -2 whole ears of corn, cut in half
  • 1 bunch Swiss chard or spinach, washed and chopped
INSTRUCTIONS:
  1. Place the chicken in a large pot, cover with the water or broth.  Add salt, pepper, and bay leaves.  Bring to a boil, then reduce the heat to medium-low and let simmer for 30 minutes.
  2. Skim off any impurities that may have risen to the top. 
  3. Add the carrots, yellow onion, garlic, potatoes, and squash. Simmer for another 30 minutes.
  4. Add the red onion, celery, and corn.  Simmer for 15 or 20 minutes until the vegetables are slightly firm.
  5. Stir in the Swiss chard (or spinach) for the last 5 minutes of cooking, until wilted.
  6. Serve in deep bowls.
