24-Hour Summer Salad

A neighborly favorite from block parties in Pheasant Hills.

As summer schedules fill up, the best recipes are the ones you can prep once and forget about until it’s time to eat. This 24-hour Summer Salad is a classic make-ahead crowd-pleaser—layered with crisp lettuce and cauliflower, green onions, and plenty of bacon, then sealed with a simple creamy topping that ties it all together. After a night in the fridge, the flavors blend beautifully, making it an easy go-to for cookouts, potlucks, and backyard dinners when you want something cold, crunchy, and ready to serve.

Ingredients:
  • 1 head of lettuce, broken
  • 1 head of cauliflower, broken
  • 1 bunch green onions, chopped
  • 1 lb. bacon, crumbled
  • 1 cup mayonnaise
  • ½ cup parmesan cheese
  • ¼ cup sugar
Procedure:
  1. In a large bowl with a tight lid, layer lettuce, cauliflower, green onions, and bacon three times, ending with bacon on top.
  2. In a separate bowl, mix mayonnaise, parmesan cheese, and sugar until well combined. Spread the mixture over the top to cover completely.
  3. Seal, refrigerate for 24 hours, then mix well before serving.
