LEMON CHIFFON PIE
A simple vintage delight from Mr. Duncan Hines’ himself that is sure to please!
I came across this recipe on Facebook and looked it up. Duncan Hines shared this recipe in 1948 when he was a traveling salesman. He later became known for Duncan Hines Cake mixes after licensing his name. This pie is amazingly good and does not have very many ingredients.

Ingredients:
1 deep dish pie crust baked
4 beaten egg yolks
½ cup sugar
½ cup lemon juice
grated rind of 1 lemon
pinch of salt
1 TBS Knox gelatin
¼ cup cold water
½ cup sugar
4 beaten egg whites
whipping cream (optional)
Instructions:
Cook egg yolks, sugar, lemon juice, rind, and salt in a double boiler, stirring constantly until consistency of custard. Soak gelatin in cold water until the gelatin is dissolved, then add to hot custard. Beat egg whites when they are fluffy, then beat in sugar. Carefully fold a little of the hot custard at a time into the egg whites. Put into baked pie shell and refrigerate for 2 hours.
