Chicken Chili

This recipe is from a Texas boating friend who prides herself on authentic Texas dishes. It is probably one of the easiest, fastest recipes to make, and it's quite tasty. As you can see from the ingredients, it is also a very healthy meal. It makes a large pot (about 15-16 bowls). I freeze a couple of containers for another time and send some home with friends to try.
