CHEESY ARTICHOKE DIP

Ingredients
  • 2 (14 oz) cans quartered artichoke hearts, drained and chopped
  • 1 1/4 cups Mexican cheese blend or cheese of choice
  • 2 tablespoons mayonnaise
  • 2 teaspoons garlic
  • 1 teaspoon paprika
Directions
  1. Preheat oven to 350°F.
  2. In a bowl, mix artichokes, 1 cup cheese, mayonnaise, and garlic. 
  3. Spread evenly in a 9x9 baking dish. 
  4. Sprinkle with remaining 1/4 cup cheese and paprika.
  5. Bake uncovered for 20 minutes until bubbly and golden brown.
  6. Serve hot with crackers, toasted bread, pita wedges, or veggies.
