Irish Potatoes

Leaving behind the famine that was the result of repeated failure of crops during the mid-1800s, millions fled Ireland for a fresh start in the US. These immigrants brought with them many traditions, with the most famous being the celebration of St Patrick’s Day in honor of the patron saint of Ireland. Enjoy this fun spin on a St. Patty’s Day treat that pays homage to this history and is fun for those of all ages to make and even more so to eat!
 
Ingredients:
  • ½ stick butter, softened
  • ½ package (4oz package of cream cheese, softened)
  • 1 tsp vanilla extract
  • 4 cups confectioners’ sugar
  • 2 ½ cups sweetened coconut
  • 2 tbsp cinnamon
  • 2 tbsp granulated sugar
 Directions:
  1. Begin by setting out the butter and cream cheese to come to room temperature.
  2. In a mixing bowl, beat together the butter and cream cheese.
  3. Slowly add the confectioners’ sugar.
  4. Add vanilla, mixing thoroughly.
  5. Add the coconut & mix until thoroughly.
  6. Chill until the mixture is firm.
  7. Spoon approx. ½ tbsp of mixture and roll into a ‘potato’ shape.
  8. In a separate dish mix the cinnamon and sugar.
  9. Roll the ‘potato’ in the cinnamon and sugar mixture.
  10. Serve & enjoy!
 Store any uneaten ‘potatoes’ in the refrigerator for up to 2 weeks.
