Cozy One-Pot Chicken & Wild Rice Soup

Ingredients:
• 1 lb chicken breasts or thighs, diced
• 1 cup wild rice blend
• 1 medium onion, chopped
• 3 carrots, sliced
• 2 celery stalks, sliced
• 3 cloves garlic, minced
• 6 cups chicken broth
• 1 cup milk or half-and-half (optional)
• 1 tbsp olive oil
• 1 tsp dried thyme
• 1 tsp dried parsley
• 1–2 bay leaves
• Salt & pepper to taste
Instructions:
1. Heat olive oil in a large pot over medium heat. Add onion,
carrots, and celery. Cook 5–6 minutes until softened.
2. Add garlic, chicken, thyme, parsley, bay leaves, salt and pepper.
Cook until lightly browned.
3. Add wild rice and chicken broth. Bring to boil, then simmer 25–30
minutes.
4. Add milk or halfâ– andâ– half for a creamy finish, if desired.
5. Adjust seasoning, remove bay leaves, and serve warm.
