Watermelon Shaved Ice
Cool, light, and bursting with fresh watermelon flavor, this simple shaved ice recipe is a great way to beat the East Texas heat.
Watermelon Shaved Ice
This takes about 5 hours to freeze plus room in your freezer for the pan, but it is a delightful refreshing dessert to serve on a hot summer day.
INGREDIENTS
- ½ of a red, seedless watermelon, meat spooned out
- ½ cup lime juice (about 3 limes)
- 1/3 cup sugar
- Lime or mint for garnish
DIRECTIONS
- Place watermelon, lime juice and sugar in blender or Vitamix and process until smooth.
- Transfer mixture into a 9" x 13" glass baking dish and put into freezer.
- After 30 minutes, scrape from the sides toward the middle with a fork.
- Continue to scrape every 30-40 minutes until all of the liquid is frozen (about 4 hours).
- If not serving immediately, cover the pan with plastic wrap.
- To serve, spoon into dessert dishes or wine glasses.
- Garnish with a sprig of mint or a peel of lime.
- Serve with a spoon.
