If you’ve ever enjoyed a coffee at Bluff Park Coffee Collective, you’ve likely already experienced the smooth, fresh flavor of Daysol Coffee, the “coffee side” of the coffee and bakery collaboration, roasted right here in Pelham by Bluff Park resident Bert Davis. Known for doing things simply—and doing them well—Daysol provides the thoughtfully crafted coffee behind the counter and is passionate about bringing a true community coffee vibe to Hoover.
Bert’s coffee journey began in Denver in 2015, where roasting started as a hobby and quickly evolved into a passion. During that time, he had the opportunity to learn alongside some of the best coffee roasters in the country – an experience that truly shaped his approach to quality and craftsmanship. After moving to Hoover in 2019 to be closer to family, Bert launched Daysol as a roasting-only operation with no storefront. Since then, the business has expanded to include a roasting facility in Pelham and a brick-and-mortar location inside Bluff Park Coffee Collective.
Daysol offers a variety of services to meet coffee lovers’ needs including online sales with deliveries all over the world, wholesale partnerships with businesses, sales at events and markets, and pop-up coffee experiences. Still, their biggest presence remains their retail location inside Bluff Park Coffee Collective.
The name Daysol combines Bert’s last name, Davis, with that of his business partner and friend, Peter Solis, who helped bring the dream to life and still collaborates from Denver.
More than just a business, Daysol is a true family affair. “We have all worked countless hours at events, roasting, hauling coffee around for deliveries, and living the life of a small business owner’s family,” says Bert. His wife, Erin, and their children – Cassidy, a rising 10th grader at Hoover High, and Teagan, a 2024 Hoover High School graduate, have each played a vital role in keeping the business running and growing.
What sets Daysol apart? “We aren’t a lot of frills and fluff,” Bert says. “We do what we do, and we do it well.” Customers consistently describe their brews as “the smoothest coffee you’ll ever drink.” Daysol serves fresh, locally roasted beans, lattes (hot and iced), cappuccinos, cortados, teas, and a rotating menu of seasonal drinks that treat coffee as culinary art. All syrups are made in-house from scratch with all-natural ingredients – no fake flavors or preservatives.
And there’s more brewing. “We’re currently building out a coffee cart that will allow us to do regular pop-ups and offer 75% of the drinks we serve at our brick-and-mortar,” Bert shares. “We definitely see ourselves growing into more locations and spreading great coffee all over Hoover and Birmingham!”
As Bert puts it, “The South has great coffee – you don’t have to go to a big city like Atlanta or Nashville to get it!”
Reflecting on the journey, he adds, “Owning a business is a lot like parenting. In the beginning, it needs you constantly. But if you stay consistent, set boundaries, and keep giving it your best, one day you’ll look up and see systems that work and a team that loves what they do. It doesn’t feel like it will ever happen when you’re in the thick of it – but it does.”
