Topsfield neighbor Elizabeth Cullinan's simple cast-iron method delivers a beautifully seared crust and juicy interior with just a few easy steps. It's an easy weeknight technique that brings steakhouse flavor to your own kitchen.
Elizabeth Cullinan's Cast Iron Steak
Ingredients
- 1 steak, about 1½ inches thick
- Olive oil cooking spray
- Your favorite steak seasonings
Directions
- Preheat the oven to 350°F.
- Heat a cast-iron grill pan (or cast-iron skillet) until very hot.
- Lightly coat the pan with olive oil cooking spray.
- Season the steak as you normally would for grilling.
- Sear the steak for about 1 minute per side.
- Transfer the entire cast-iron pan to the oven.
- Roast until the steak reaches your preferred doneness. For a 1½-inch steak cooked rare to medium-rare, Elizabeth recommends about 5 minutes in the oven.
- Remove from the oven and let the steak rest for several minutes before serving.
