Summer Shrimp Pasta Salad

Who doesn’t love a tasty summer salad! This one is full of delicious shrimp, lots of fruit, summer veggies, and yummy herbs. Perfect for a warm summer day!
 
Ingredients
1 pkg. Bow tie pasta
1 pint fresh strawberries
½ pint fresh blueberries
1-15 oz can of canned sweet corn
2 cups of cubed watermelon
1 avocado cubed
2 pounds of jumbo shrimp
2 cloves of fresh chopped garlic
Champagne dressing (Girard’s is a favorite)
1 bunch of fresh basil
1 bunch of fresh mint
Lots of freshly grated parmesan cheese to taste

To Prepare
Saute the shrimp in olive oil and add the chopped garlic right before shrimp is fully cooked. Mix shrimp, prepared pasta and all other ingredients in a large bowl, cover and chill overnight. Serve cold and garnish with toasted pine nuts.
 
*Note it is best to use fresh fruit, frozen would not work well.
 
This is one of my mom and my favorite dishes to prepare on warm summer afternoons. Perfectly enjoyed dining outside paired with a nice glass of light bodied wine!
