Grilled Chicken & Pineapple Skewers


Bring the taste of summer to your table with these colorful, sweet-and-savory skewers—great for backyard BBQs, picnics, or an easy weeknight dinner.

Ingredients:
  • 1 ½ lbs boneless, skinless chicken breasts, cut into 1.5” cubes
  • 1 fresh pineapple, peeled, cored, and cut into chunks
  • 1 red bell pepper, cut into 1.5” pieces
  • 1 red onion, cut into chunks
  • 2 tbsp olive oil
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp lime juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Wooden skewers (soak in water for 30 mins) or metal skewers
Instructions:
  1. Marinate the Chicken: In a bowl, whisk together olive oil, soy sauce, honey, lime juice, garlic, salt, and pepper. Add chicken and marinate for 30 minutes to 1 hour in the fridge.
  2. Assemble the Skewers: Thread chicken, pineapple, bell pepper, and onion alternately onto skewers.
  3. Grill: Heat grill to medium-high. Grill skewers for 10-12 minutes, turning occasionally, until chicken is fully cooked and slightly charred.
  4. Serve: Garnish with a squeeze of fresh lime and a sprinkle of chopped cilantro if desired. Serve with rice or a summer salad.
Tip: Let the kids help thread the skewers (with supervision!) for a fun, hands-on kitchen activity.
