Freshness First
At Fields, preparation for making its various elixirs begins long before your drink is poured. Citrus juices are pressed by hand three to four times each week, ensuring brightness and balance. The bouquet used for spirit-free options is a great example of how they build kaleidoscopic flavor, interweaving fresh lemon, orange, and pineapple juices into something vibrant and celebratory — proof that spirit-free offerings can feel just as intentional as their classic counterparts.

The resort’s noteworthy Espresso Martini — available with or without spirits — which is unlike any that you’ve had before with incredible depth and richness, relies on a 24-hour cold-extracted espresso concentrate made with Café Du Monde’s chicory blend from New Orleans. Introduced by the resort’s beverage consultant William Elliott (of Brooklyn’s Maison Premiere, James Beard Award winner for Outstanding Bar) and finished with vanilla, the process yields a smooth, layered profile without bitterness.

Local Inspiration
Seasonality guides the bar as much as it does the kitchen at Fields. The Bull’s Blood Mule incorporates house-made ginger syrup crafted from freshly pressed ginger juice, cinnamon, and sugar, alongside fresh-pressed purple beets for earthy nuance and striking color. Many of the ingredients from this signature cocktail are sourced from its partners at Tap Root Fields farm — from ginger root to beets and herbs — reinforcing the property’s farm-to-table ethos and evolving relationship with the land.

A Sense of Place
The wine program, curated by certified sommelier Alison Ferretti of Vine & Voyage, carries that same philosophy. Designed to be thoughtful and approachable, the list balances classic regions like Burgundy and Champagne with hidden gems that offer value and discovery. “A great bottle gives us a feeling of connection,” Alison says. “You travel through the glass — to a Tuscan hillside, Napa Valley, or right here in the Finger Lakes.”
